1) Tom Petty - for all my bluster about punk rock roots, the jangle of Tom Petty is probably the more correct description of my heart. I probably saw him live in concert more than any other performer - barring Flat Duo Jets perhaps - and he will be missed.
2) Apple TV - this little device has changed my life by turning my regular ol’ TV into a “smart TV” that I can talk to and find all my favorite content on.
3) Amtrak - I hop a train to get to DC a few times a year, and for that trip specifically, it’s a dream. I refuse to drive in DC, so to be able to ride up, have people help you with your bags, have room to walk around, drinks and food when you want them, and hassle-free wi-fi is a true delight.
4) #Inktober - a drawing a day for every day of the month is a relentless exercise in dedication and there are so many amazing artists to explore through that hashtag on twitter.
5) These BlackBean Balls for some friends that don’t eat meat.
• 21 oz can of Bush’s black beans (rough chopped with hand held processor)
• 1/2 c finely chopped onion
• 1/2 c panko breadcrumps (may need to add more depending on moisture)
• 1 egg
• 1/2 Tbs of siracha
Preheat oven to 425-degrees.
Mix all ingredients together.
Form into 1-inch balls.
Place on lightly sprayed cookie sheet.
Bake for 6 minutes.
Serve in sauce or with toothpicks for an appetizer. Drizzle with more siracha if you like it hot, or a guacamole sauce if not.
